An artisanal winery begun in the 1950s in Rias Baixas, northwest Spain, Bodega Don Olegario is a top producer of Albarino, the region’s most famous grape variety. At 312 feet in elevation, the 12.4-acre single vineyard has 30-year-old pergola-trained vines in sandy and granite soils with good drainage and east and west exposures. Indigenous herbs are planted among the vines for favorable drainage in the area’s wet conditions. Sustainable winegrowing is used, with organic compost; leaf and crop thinning are employed when necessary. The grapes are hand harvested and undergo a cold maceration before fermentation in stainless steel vats at controlled temperatures.

Tasting notes
This brilliantly-colored wine has a straw hue with greenish tints. The wine has intense and powerful aromas of apple, white pear, spring flowers, citrus and ripe stone fruits, with notes of pollen, fennel and licorice. Overall, clean, defined and elegant aromas evolve and intensify in the glass, giving great complexity. The wine shows remarkable volume, with a polished character, balanced structure and great length in the mouth. With a fragrant and subtle finish, the wine’s aromas and bright acidity invite another sip.

Food pairing
Pairs well with all seafood, especially shellfish, as well as poultry, rice dishes and soft cheeses.
