The 2008 Paretaio possesses gorgeous depth. Hints of tobacco, licorice grilled herbs and leather lead to an expressive core of black cherries and plums in this layered, dense offering. Everything is in the right place. Paretaio is 95% Sangiovese and 5% Merlot aged in French oak barrels. This is a great showing. Anticipated maturity: 2013-2023.

After a careful selection of Sangiovese grapes and properly using barrique aging, which enhances the typical characteristics of the Tuscan Sangiovese, we create an elegant wine with great harmony and structure, soft textured and velvety, with a balanced taste. It is produced from grapes of the Paretaio vineyard in San Gimignano with Sangiovese (90%) and other red Tuscan grapes (10%) selected during the harvest. After a 12 months stay in 225l. oak barrels it spends 12 more months to refine in bottle before being sold
Goes well with red meats, heavy meat sauces, and soft and aged cheeses. A typical Tuscan dish would be "lepre in bianco", a rabbit dish.
