As the son of a pastry chef, Dominique Laurent developed a fine palate a young age. Naturally, he began to blend his appreciation of food with fine wine and opened a small wine shop in Nuits-Saint-Georges. It did not take long for this to evolve into a full-scale negociant business. Dominique will only use old vine cuvees from superior parcels that are made by top producers, regardless of price. Having the benefit of long-term relationships, Dominique is able to have the grapes prepared and vinified to his specifications so that the natural character of the wines is intensified as it rests in Laurent’s cellars. Dominique is equally famous for his oak barrels, which he refers to as ”magic barrels”, and you’ll find them in the top cellars in Burgundy and round the world. As with his wines, Dominique spares no expense to create these barrels; the wood is from very old trees and the curing and toasting of the barrels are managed with a careful eye for detail and quality. Dominique believes that wines must find their own equilibrium, and will taste each wine as it evolves. Every barrel is treated individually and the aging regimen is adjusted to bring out the wine’s unique qualities. Dominique adds the minimal amount of sulphur, doesn’t filter, and in certain years, won’t rack. Dom views his methods as a return to the ”golden age” of Burgundian winemaking in the early 20th century. In a relatively short time, Dominique Laurent made a name for himself in the Cote d’Or and was hailed as ”one of the most influential figures in wine during the last twenty years”, by Robert M. Parker, Jr. His most recent venture, in partnership with his son Jean, is Domaine Laurent Pere et Fils, which began with vines in Meursault and Nuits-St.-Georges, then expanded to Gevrey-Chambertin and Clos Vougeot. The first vintage was 2007.
